Vegan Egg Scramble
Super easy 10 minute vegan egg scramble. Fun & healthy brunch idea!
This can be done with either: Tofu, or chickpeas
All you’ll Need:
Tofu (extra firm) or chickpeas
Kala Namak black Salt
It’s pretty straight forward. Remember to always cook on low-medium heat to avoid burning the oil and to slow down the breakdown of enzymes and nutrients.
Mince onions and garlic (taste dependent) and sautée on a pan with coconut oil/ olive oil (low heat).
If you are using chickpeas, make sure the chickpeas are boiled and cooked first.
If you are using tofu, cut it up into little blocks.
Mix the onions, spices, and chickpeas/tofu together until they become a nice yellow and flavour to taste!
The secret is in the salt- it literally tastes like eggs!

Potatoes are life! I cooked them in coconut oil, doused them in cumin, curry, nutritional yeast, salt, pepper, coriander, garlic salt. Super delicious!
