HEARTY ROOT VEGETABLE SOUP- If You're Feeling Ungrounded & Worried

Root vegetables, known for their mineral dense benefits. Rooted in the earth, cool season vegetables, they are known to nourish us during the colder fall and winter months, helping us to transition to the changing of the seasons, providing us with warmth and nourishment, grounding us.

However, the colder climate shouldn’t be the only time we turn to them. Whenever you are at a cross roads in your life- have to make big decisions, or if there is immense change taking place and you feel worried about the future, if something is under attack (finances/relationship/ health/ family), root vegetables can help to support and stabilize you.

The diverse rainbow colour of root vegetables offer different nutrients and benefits. For instance, orange toned vegetables such as sweet potatoes, squash, peppers and carrots offer high levels of vitamin A, in the form of betacarotene. White root vegetables such as garlic and onions are high in sulfur, helping to detoxify our bodies, fight off pathogens and improve the immune system.

Our root is the seat of our sense of stability, security & groundedenss. When it is imbalanced, we may experience some symptoms such as a lowered immune system, getting sick often, lymphatic issues, issues with structure or blood. Sometimes, it might manifest as a loss of sexual desire as it is also connected to our sacral.

Root vegetables have many benefits, including being loaded in minerals that support our bones, joints, brain, nervous system, heart, lungs, synthesis of DNA, and help to reduce inflammation in our body.

  • Complex carbohydrates-  (higher in fiber and digest more slowly= more filling + nutrient rich).

  • Rich in soluble and insoluble fibre, which helps to boost beneficial gut bacteria, reduce the level of blood glucose, and reduce the risk of type-2 diabetes, bowel cancer & other diseases.

  • Vitamins A, B and C

  • Minerals like: manganese, magnesium, potassium, folate


RECIPE

INGREDIENTS

Sweet potato

Turnip

Carrots

Parsnip

Rutabega

Yam

Ginger, Onion, Garlic

Spices (cayenne, paprika, cumin, chilli flakes salt, pepper)

Dried herbs (thyme, oregano, rosemary)

Cilantro on top

Directions

  1. Peel all the vegetables

  2. Bring water to a boil and add in the heavier items. Cover & simmer between low- medium for 25 minutes.

  3. Add onions & garlic

  4. Simmer for another 10 minutes

  5. Add the spices & herbs and simmer for another 15 minutes on low.

  6. Add fresh relish such as cilantro or parsley.

  7. Serve & Enjoy
